Road Trip to Sarasota

During the Holiday Season we are planning to spend a day away in Sarasota. It is an easy drive, especially if you take Route 27 South to 64 to 75. You can travel on I4, but to me, that makes for a stressful drive. There is a lot to do in Sarasota. It is a vibrant city on the water. Lee and I enjoy the Ringling Museum and we always enjoy a stop at the Tiki Bar and Grill in Downtown Sarasota; as it sits on Sarasota Bay, and is a great place to stop to enjoy a drink by the water, plus there is usually live, mellow music playing for your enjoyment. But this year, we are planning to visit the Marietta Museum of Art & Whimsy plus make a stop at one or two of the wonderful Sarasota specialty stores to gather goodies for the holidays. We love Piccolo Italian Market & Deli and Geier’s Sausage Kitchen, both great spots; hard to choose between the two so I will leave the spot you choose up to you. When we travel to Sarasota, and plan to visit the specialty food stores, we bring an empty cooler with ice packs for the return trip home. Once we have made our specialty stops, we put the car on auto pilot, play some soft jazz, and make the leisurely drive home knowing that we have lots of goodies to enjoy upon our return.

Orchids, Orchids, Orchids

Our Orchids are blooming like crazy; we are enjoying an explosion of pink, orange, white, purple, and yellow blooms, and they are just beautiful. We feel lucky to live so close to BOK TOWER. The secret reason our orchids are so prolific is last year we enrolled in an Orchid Class at BOK TOWER. You know how it goes, you solve one problem and another problem crops up. Our current Problem, we need to expand the lanai to accommodate the abundance of tender, but strong, beautiful orchids that are blooming. We are Feeling Lucky that we have been so successful in our quest for color. I feel an affinity to orchids, as they are tender yet strong, two qualities that are attractive in life, flowers, and people. So, we pot, we plant, and we enjoy every bloom. BOK Tower has so much going on, between the classes, the gardens, the Farm to Table Dinners, the garden concerts, and the Terrace Events, BOK will keep you busy. I am glad it is a quick 25 minutes to the gardens, and even on a hot day, you can usually find a cool spot under the trees. Unfortunately, we did not have time to visit Pinewood Estate this year to see the Holiday decorations, but there is still time for you to visit. Go to Bok’s Website and see what tickets, events, activities are available, enroll or buy a ticket, I know you will enjoy whatever you choose to do in the garden. Top Dressed Baked Cod Recipe

BAR HARBOR SEAFOOD at 2000 Premier Row, Orlando 407-447-6455 has a fresh assortment of seafood in their market. My brother in law Gregg was introduced to this fish market, in the middle of an industrial park, by one of his buddies. Since we have been making a regular run to this NOT Fancy, but spotlessly clean, fresh seafood market. For Christmas Eve, Gregg will be filling his cooler with ice and getting ready to make a run to the fish market to pick up the fresh catch of the moment for our Traditional Christmas Eve Dinner. With seafood in mind, I am passing along this simple but delicious recipe for fish. This recipe works with all white fish but is especially good with COD.

TOP DRESSED BAKED COD

4 6 Oz Cod Fillets

1/3 Cup Panko Breadcrumbs

1 TBSP Parsley Fresh Chopped

2 TBSP Mayonnaise

1 TBSP Dijon Mustard

¼ TSP Cayenne Pepper

Extra Virgin Olive Oil to drizzle on pan

1 Lemon

Position a rack 6 inches from the heat and preheat the broiler. Combine the panko and 1 TBSP Parsley on a plate. Mix the Mayo, Mustard, and Cayenne and a squeeze of lemon in a small bowl. Season the cod on both sides with salt; brush the top with the mayo mixture, then invert into the panko mixture, pressing to help it adhere.

Drizzle a baking sheet with olive oil and top with the cod, panko-side up. Broil until the fish is just cooked through and the panko is crisp and golden, about 6 minutes.

I always serve this COD over Greens. My green recipe follows:

1 head escarole, chopped

1 bunch kale, stems removed, leaves chopped

Lemon

1 red onion, halved and sliced

1 TBSP Parsley

Meanwhile, heat a large pot over medium high heat. Add 3 TBSP, olive oil, then add the red onion and cook, stirring occasionally, until lightly browned, about 3 minutes. Add the escarole, kale, ½ TSP salt and a few grinds of pepper. Cook, stirring occasionally, until the greens are wilted, about 3 minutes. Stir in some lemon juice to taste and the remaining 1 TBSP Parsley. If you make these greens for Christmas, it is nice to add some Grape or Cherry Tomatoes and cook them with the onions.

Serve the cod over the greens and add lemon wedges.

What are you doing this year for the Holidays?

Whatever you do, we hope you do it with a full heart, love and joy. We wish you all a Bright Holiday Season filled with love, laughter and good health. Lee and I are taking a trip to see the lights in St. Augustine this year. It should be beautiful and fun. We will only be away overnight, but it will be a nice break and a great kick off for the 2019 Holidays.

Last week we enjoyed the Sunset & Symphony Holiday Music Concert at BOK Tower Gardens. This concert is a beautiful evening filled with amazing music, joy and a great start to the Christmas Holiday. We Packed a picnic, a blanket, some chairs and a bottle of wine. Grabbed our friends and family and got down in front of the stage on the great lawn at BOK Tower. This concert never disappoints! The music starts at 4 pm and the Orlando Philharmonic Orchestra began to play at 6 PM. This is a wonderful opportunity to listen and enjoy classical and holiday music performed by the World Famous Orlando Philharmonic Orchestra.

Our other Holiday Plans are all easy. A traditional fish dinner on Christmas Eve, followed by a casual Christmas Day enjoying leftovers, plus a few new items, shared quietly with our family. There are so many things going on in December in Central Florida, it is hard to choose just one or two, but we are going to keep this year easy. Thanks to you, we have been very busy at Bella Verde Realty and a quiet holiday seems like the perfect opportunity to recharge our batteries and make our business plan for 2020.

Looking for a Good Breakfast, Look No Further. First Watch has you Covered.

Yes, the name is unusual, my curiosity led me to do a bit of research into the name. Turns out the name is a nautical reference to the first work shift aboard a ship and since the First Watch Restaurants are only open 7 am to 2:30 pm the chain founders felt the name appropriate. This chain was founded after the co-owners of First Watch left the breakfast chain of Le Peep. Interesting, when we lived in NJ I used to love breakfast at Le Peep on Route 4 in Paramus. Thoughts of leisurely brunches at Le Peep evoke sweet memories of time spent with friends from my NJ Youth.

First Watch in Champions Gate is convenient and a really good choice for breakfast or lunch. Lee and I start our days early, so finding a great spot for a good, healthy Breakfast is a great bonus to us. First Watch serves up fresh, made to order, locally sourced, and truly inspired menu items. Yes, they are a chain, but a responsible chain who care for their employees, give back to the community, and are concerned about the quality of the food they serve. On a recent visit at 7 am I started my day with the Turkey Egg White Omelet with house roasted onions, tomatoes, spinach and Feta. The Omelet was piping hot and delicious, and carried me through the entire day. Lee enjoyed The Avocado, freshly smashed on Toast with Extra Virgin Olive Oil, a squeeze of lemon and sea salt served beside two basted eggs. First Watch does get crowded on weekends and at peak breakfast and lunch hours, but it is worth the wait. Since Lee and I are out working, breakfast at 7 am works for us, but I hear from my retired friends that First Watch is the perfect Brunch Spot for dining at 10 or 11 am.

Tis the Season to Enjoy Fall Flavors

Pumpkin Quinoa Bars, Gluten Free, Great for Breakfast, a Snack and good on the Golf Course too!

1 ½ Cup Quick Cook Oats

1 Cup Cooked Quinoa (cooled to room temp)

1 tsp baking powder

¼ cup ground flax seed

2 tsp pumpkin pie spice

½ cup real maple syrup

½ cup pumpkin puree (right from the can)

1 egg

2 tbsp almond butter

1 tsp vanilla

½ cup chopped pecans or walnuts

 

Preheat Oven to 350 degrees. Line a 9×9 square baking pan with parchment and spray with nonstick spray. To keep these Gluten Free do not use spray with flour.

Combine oats, quinoa, baking powder, flax seed, and pumpkin pie spice and stir till distributed

In a second bowl, whisk the maple syrup, pumpkin puree, egg, almond butter and vanilla together.

Combine the wet with the dry, stir into a batter and fold in the nuts.

Pour into the prepared pan and smooth the top.

Bake in the center rack of the oven for 25 – 35 minutes until the bars are golden and firm to the touch.

Remove the pan, cool completely. Once Cooled, slice the bars. I wrap these bars individually and freeze them. These bars will keep in the refrigerator for several days, and in the freezer longer.
